Grilled Garlic and Coriander Chicken
Ingredients:
—3 Boned and Skinned Chicken Breasts, Halved
—2 Garlic Cloves, Peeled and Diced
—Juice of One Lime
—1/4 Cup Good Extra-Virgin Olive Oil
—Kosher Salt & Black Pepper to Taste
Directions:
- Place the chicken in a glass Pyrex dish.
- Rub with the garlic and season with the salt and pepper to taste.
- Dribble the lime juice and the olive oil over the chicken.
- Sprinkle with the coriander and let sit in the refrigerator, covered with plastic wrap, for several hours.
- Cook on an outdoor grill on medium high heat for several minutes on each side.
- Plate with a side-salad of your choice.
